La Varenne was first located in Paris in the rue Saint-Dominique in the 7th
arrondissement near the Hôtel des Invalides beginning in 1975 and until 1990, a period
during which it was accredited to deliver professional culinary degrees. After 1990
when the Paris location closed, the school's programs primarily continued in Burgundy
and in the United States. The records of La Varenne in Paris consist of accounting and
administrative files relating to the school's foundation, films and photographs
documenting the school's premises and its staff, and newsletters. For press coverage
