Series II.E. consists of recipes and menus that were written and prepared by Willan
and La Varenne staff, menus gathered in restaurants, as well as recipes and menus
gathered as reference sources and used in the context of the educational programs of
La Varenne. For menus designed by artists or historical menus dating from the
18th-19th centuries, see Series IV. Anne Willan and Mark Cherniavsky gastronomy

written by Craig Claiborne.
